Upside Down Blood Orange Cake

Ingredients For This Recipe

  • 1 box white cake mix (or substitute for orange cake mix)
  • 3 large eggs
  • ½ cup fresh blood orange juice (freshly squeezed, no pulp)
  • ½ cup oil
  • ½ cup water
  • Zest of one blood orange
  • ¼ cup unsalted butter
  • ¾ cup brown sugar
  • 2 sliced blood oranges, sliced

Preparation

  1. In a 5QT mixing bowl combine cake mix, eggs, orange juice and zest, set aside.
  2. Place skillet on Royal Prestige® Precision Cook.
  3. Melt the Butter on medium-high heat and dissolve the Sugar using the Cooking by Power Level function.
  4. Once dissolved, reduce heat to low and quickly arrange orange slices over bottom.
  5. Add cake batter and spread out evenly.
  6. Cover with Redi-Temp™ valve closed and cook for 30 minutes or until cake is done.
  7. Remove from heat and let rest for 5 minutes.
  8. Carefully flip skillet over serving plate, letting cake fall out; drizzle remaining syrup over top.
  9. Cut, plate and serve.
