Ingredients For This Recipe

  • 1 ½ cups all-purpose flour
  • 1 tbsp baking power
  • ½ tsp baking soda
  • 1 tsp salt
  • 5 tbsp unsalted butter, mall cubes, cold
  • ¾ cup buttermilk
  • Oil spray
  • 3-inch cookie cutter
  • Rolling pin, optional
  • Garnish
  • Fruit Jams, of your choice
  • Butter
  • Spreads, of your choice

    Preparation

    1. Insert the chopping blade into the bowl and place the flour, baking powder, baking soda and salt.
    2. Place the lid on the bowl and turn it clockwise until it clicks into place.
    3. Align the motor body with the chopping bowl lid and press it into place.
    4. Start beating slowly and then turn until well blended.
    5. Introduce the cold butter and beat on high speed until the butter is well blended; transfer to a bowl.
    6. Make a well in the center by pushing the flour to the sides and pour in the buttermilk.
    7. Gently mix the flour with the buttermilk until everything is incorporated.
    8. Turn the dough out onto the lightly floured surface and gently roll it out with your hands into a wide rectangle about 1 inch thick.
    9. Fold the dough in half and turn it over, gently pat and roll it out to form a rectangle of the same thickness, and repeat once more.
    10. Cut the cookies with a cookie cutter and shape the excess trimming to make another cookie; cover and set aside.
    11. Spray or brush the surface of the skillet with oil and preheat the skillet for 30 seconds over medium heat.
    12. Place all the cookies in the skillet, lower the heat to medium-low and put the lid on.
    13. Cook for about 8 minutes on each side and adjust the heat if necessary to prevent burning.
    14. Serve, garnish and enjoy.
