Spring Carrot, Ginger & Turmeric Soup

Ingredients For This Recipe

  • 1 ½ lb peeled carrots, 1” pieces
  • 2 celery sticks, 1” pieces
  • 1” ginger knob, peeled
  • 1” turmeric knob, peeled
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • 6 cups vegetable stock
  • Kosher salt
  •  
  • Garnish
  • Chopped Green Onions

Preparation

  1. Place all the ingredients except the Garnish into the Dutch Oven.
  2. Cover with Redi-Temp™ valve open, turn heat to medium high, bring to a whistle.
  3. Reduce heat to low, close valve and cook for 10 minutes.
  4. Let cool and transfer to blender. Process on high until well pureed.
  5. Pour back into Dutch Oven and bring to a boil over medium high heat.
  6. Adjust seasoning with salt if needed.
  7. Plate, garnish and enjoy.
