Season the salmon with salt and pepper to taste. Preheat 10½-inch Skillet on medium-high heat for about 3 minutes or until a few drops of water sprinkle onto the surface without evaporating.
Create a bed with the half orange slices and celery pieces. Place the salmon fillets on top and squeeze the juice of the other orange well over them. Add the vegetables.
Lower the heat to low, cover with the Redi-Temp™ valve closed and cook for 6 minutes, or until the salmon is done. Serve with white rice and mango pico de gallo.
