Spray or using a napkin with oil coat the surface of the 12-inch skillet and pre-heat for 30 seconds on medium.
Place in the Sweet Potato, Onion, Jalapeno and Salt to taste into the skillet and sauté for 5 minutes.
Place the lid on and lower the heat to low, cook for another 5 minutes or until the Sweet Potato is done.
Mix in the Beans, Corn, Chili Powder, and Cumin and cook for another 5 minutes or until they are heated through.
Fold in the Spinach and cook until just wilted and adjust seasoning with Salt if needed.
Once done plate the hash and set aside.
Spray or using a napkin with oil coat the surface of the 8-inch skillet and pre-heat for 30 seconds on medium.
Crack in an Egg and cook for 3 minutes for a sunny side up egg or until your desired doneness, transfer and place it onto the Hash. (Chef Note: You may use the lid to help you cook and set the egg whites if needed.)
Repeat the last 2 steps to cook the rest of the Eggs.
