Irish-Style Pea, Leek & Potato Soup

Ingredients For This Recipe

  • ½ Yellow Onion, small dice
  • 2 Garlic Cloves, rough chop
  • 1 Jalapeno, small dice
  • 1 Green Bell Pepper, small dice
  • 3 Large Leeks, cut in half and sliced
  • 2 Russet Potatoes, peeled, small dice
  • 2 cup Frozen Peas
  • 10 cups Vegetable Stock or Water
  • Kosher Salt, to taste
  • 1 Cup Heavy Cream

Preparation

  1. Place all the ingredients except the Heavy Cream and Garnish, in the Dutch Oven. Mix well with the Silicone Spatula.
  2. Cover with Redi-Temp™ Valve open, turn on the heat to medium-high and wait until it whistles.
  3. Turn the heat to low, close the valve and cook for 10 minutes or until the potatoes are soft.
  4. Turn off the heat and let cool down a bit before transferring to the Blender Jar.
  5. Blend on low for a couple of seconds and then slowly turn the speed to high for 1 minute or until well pureed.
  6. Pour the Soup back into the Dutch Oven and turn the heat to medium.
  7. Add the heavy cream while mixing and adjust seasoning with salt.
  8. Serve hot. Garnish to taste.
