Place paper towels in skillet, arrange cauliflower and garlic on top; cover with Redi-Temp™ valve open and cook over medium high heat until it whistles.
Reduce heat to low, close valve and cook for 25 minutes or until cauliflower is soft; remove and discard paper towels.
Blend cauliflower on high until pureed. Add cream, parmesan, butter and salt to taste; blend on high until well combined. Turn up heat to medium and cook until hot.
